1

Welcome to Average Joe's cooking show, today we're making a Spanish tortilla.

2

Start by dicing about a half a yellow onion finely.

3

Heat olive oil in a skillet over medium heat and add the diced onions.

4

Cook the onions until they are translucent and soft, about 5 minutes.

5

In a large bowl, crack 5 eggs and add about a teaspoon each of salt and black pepper.

6

Add 1/2 cup of milk or cream to the egg mixture and mix using a hand blender or whisk.

7

Turn off the heat on the onions and let them cool before adding to the egg mixture.

8

Once cooled, add the cooked onions to the egg mixture.

9

Grate some cheese (optional) and add it to the mixture.

10

Add 1 bag of kettle chips to the mixture and stir to combine and coat the chips.

11

Let the mixture sit for 10 minutes to allow the chips to soften.

12

After 10 minutes, heat olive oil in the skillet on low heat.

13

Pour the mixture into the skillet and cook for about 3-4 minutes until the edges start to firm up.

14

Check the top; if it's still loose, ensure it has cooked enough around the sides.

15

Place a pan over the skillet and carefully flip the tortilla to cook the other side.

16

Cook the second side for about 3-5 minutes until it firms up and reaches an internal temperature of 170°F.

17

Sprinkle some green onion on top if desired.

18

Remove from the skillet and let it cool slightly before cutting into wedges.
