12-14 pound beef brisket
6 pack of Mexican beer (preferably dark beer)
6 pack of Dr. Pepper or Cola
3 New Mexico or California dried chilis
3 Guajillo dried chilis
3 Pasilla dried chilis
3 Ancho dried chilis
1/2 large white onion, chopped
Sliced ginger
5-6 whole cloves
3 large or 6 small garlic cloves
2 tsp salt
2 tsp black pepper
1 tsp cumin seed
1 tsp dried Mexican oregano
1/3 cup apple cider vinegar
12 oz Dr. Pepper or Cola
Chopped onion (for topping)
Cilantro (for topping)
Splash of lime juice (for topping)

Place dried de-seeded chilis in water and bring to a boil.

Allow to simmer covered for 10-15 minutes.

Remove chilis from water and place into a blender with remaining marinade ingredients.

If blended mixture seems too thick, add more Dr. Pepper or water to thin out.

Reserve at least 1 cup of marinade for later.

Pour marinade over brisket and coat all sides.

Allow brisket to marinate for at least 6 hours, preferably overnight.

After marinating, place brisket onto your smoker at 275°F and allow to smoke for 2-3 hours.

Place brisket into a foil pan or Dutch oven, add reserved cup of marinade, 12 oz Dr. Pepper, and 2-3 bottles of your favorite beer, and cover with foil.

Allow brisket to braise for an additional 4-6 hours or until fork tender.

Serve chopped brisket with chopped onions and cilantro as toppings, and pour some of the consommé or braising liquid over the meat.
