3 pounds beef (shoulder roast, chuck roast, stew meat, short ribs)
3 tbsp vegetable oil
3 dried ancho chilies
3 dried guajillo chilies
1 new Mexican chile
1 chile de árbol (optional)
1 white or yellow onion sliced
6 cloves garlic whole
2 bay leaves
½ tsp cinnamon (ground)
2 tsp dried Mexican oregano
1½ tsp cumin (ground)
1 tsp coriander (ground)
2 tsp tomato paste
2 cups chicken or beef stock
2 tbsp apple cider vinegar
1 tbsp soy sauce (optional)
salt and pepper
12 corn or flour tortillas
1 block or bag melting cheese (Oaxaca or mozzarella cheese) grated
1 white onion finely chopped
1 bunch cilantro (optional)
1 lime cut into wedges

Prepare the dried chiles by removing the seeds and stems.

Chop the chiles into 1" pieces.

Turn on "saute" mode on Instant Pot.

Toast the chiles for 5 minutes.

Chop up 1 white onion.

Prepare 6 cloves of garlic whole.

Remove chiles and set aside.

Add meat to hot Instant Pot and saute for 3 minutes per side.

Deglaze the instant pot with 1 cup chicken stock.

Flip over and fry opposite side.

Set cooked taco on paper towel to absorb oil & cool down.
