Preheat your oven to 350 degrees Fahrenheit.
In a bowl, combine 2 tablespoons of ground flaxseed with 6 tablespoons of water and 1/8 teaspoon of baking powder. Let it stand for at least 30 minutes.
In a separate bowl, mash 3 ripe bananas.
Add 1/2 cup of sugar-free syrup, 1.5 tablespoons of melted coconut oil, and the prepared flaxseed mixture to the mashed bananas. Mix well.
In another bowl, combine 2 cups of oatmeal flour, 2 teaspoons of baking soda, a pinch of salt, 1/2 tablespoon of molasses, and desired spices (cinnamon and nutmeg).
Mix the dry ingredients together until well combined.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Fold in sunflower seeds, chocolate chips, and any other desired add-ins (like nuts or dried fruit).
Scoop the batter into lined muffin trays, filling each cup evenly.
Bake in the preheated oven for 15 to 20 minutes, checking for doneness.
Remove from the oven and let cool before serving.
