Line a 9x9 inch baking pan with foil, draping over the edges (or use a 10x7 inch pan).
In a 4-quart saucepan, melt 1.5 sticks of unsalted butter over medium-high heat.
Add 3 cups of sugar and the entire 5 oz can of evaporated milk to the saucepan.
Stir the mixture until it comes to a boil, which should take about 3 minutes.
Once boiling, reduce the heat to medium and insert a candy thermometer, stirring continuously until it reaches 234°F, which should take about 5 to 6 minutes.
Once it reaches 234°F, immediately remove the saucepan from heat.
Quickly add the entire 7 oz jar of marshmallow cream to the mixture, using a spatula with a bit of butter on it to help.
Stir in 1 teaspoon of pure vanilla extract until well mixed.
Slowly add 2 cups of semi-sweet chocolate chips a little at a time, stirring until melted and combined.
Pour the fudge mixture into the lined baking pan, spreading it evenly from side to side.
Let the fudge sit for 2 hours to cool and set.
