Start by making the Greek dressing in a small mason jar by adding olive oil, minced garlic, red wine vinegar, lemon juice, oregano, salt, black pepper, and a little bit of dijon mustard.
Seal the jar and shake well to emulsify the dressing.
To build the Greek salad, pour the dressing into the bottom of a mason jar.
Add cherry tomatoes to marinate in the dressing.
Add cucumbers, black olives, red onion, and feta cheese.
Add chickpeas and chopped rotisserie chicken.
Top everything off with a mixture of romaine and iceberg lettuce, packing it in tightly.
Seal the jar and store it in the fridge until ready to eat.
When ready to eat, flip the jar upside down to let the dressing cascade over the ingredients and shake it out into a bowl.
Next, make the cilantro lime dressing in a food processor by adding olive oil, cilantro, white vinegar, honey, fresh lime juice, minced garlic, and salt.
Blend until smooth, adding water if necessary to reach desired consistency.
Pour the cilantro lime dressing into the bottom of a mason jar.
Add cherry tomatoes to marinate in the dressing.
Add avocado, black beans, corn, jalapenos, pickled jalapenos, green onions, cotija cheese, and chopped rotisserie chicken.
Top with lettuce and seal the jar.
Store in the fridge until ready to eat, then flip and shake into a bowl.
For the Italian dressing, add olive oil, minced garlic, white wine vinegar, dry italian herb seasoning, lemon juice, honey, salt, pepper, and parmesan cheese to a food processor.
Blend until smooth, using fresh parmesan if available.
Pour the Italian dressing into the bottom of a mason jar.
Add cherry tomatoes to marinate in the dressing.
Add red onion, pepperoncini peppers, mozzarella cheese, pepperonis, salami, and mini penne pasta.
Top with lettuce and seal the jar.
Store in the fridge until ready to eat, then flip and shake into a bowl.
