Warm milk in a bowl, ensuring it's not too hot to avoid killing the yeast.
Add 7 grams of instant active yeast to the warm milk and stir; set aside to let it foam.
Prepare the filling by mixing room temperature butter, brown sugar, and honey in a bowl; add spices like cinnamon, allspice, ginger, and cloves.
Cream the filling mixture until smooth and stiff, ensuring no lumps remain; taste and adjust spices if necessary.
In a separate bowl, combine 400 grams of all-purpose flour, 40 grams of granulated sugar, 8 grams of salt, and 1 large egg; whisk together.
Add the foamy yeast mixture and 50 grams of molasses to the dry ingredients and mix until combined.
Add room temperature butter to the dough and mix until it starts to develop gluten; check for elasticity using the window test.
Spray a bowl with Pam spray, form the dough into a ball, cover with plastic wrap, and place in a warm area to proof for 2 hours.
After the first proof, refrigerate the dough overnight to slow down yeast growth, making it easier to handle.
Dust a work surface with flour and roll out the chilled dough to the desired thickness; aim for a rectangle shape.
Brush off excess flour from the rolled-out dough before adding the filling.
Spread the filling mixture evenly over the dough, ensuring it covers the entire surface.
Roll the dough tightly into a log, ensuring the filling stays inside.
Cut the log into 12 equal pieces, about 1.25 inches thick, and place them in a greased baking dish.
Cover the rolls and let them rise again until doubled in size, about 30-45 minutes.
Preheat the oven to 350°F (175°C).
Bake the rolls until golden brown, about 25-30 minutes.
