1

Mix 1 tablespoon of flour, 1 teaspoon of salt, 1 teaspoon of black pepper, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and 1/2 teaspoon of paprika in a bowl.

2

Set the spice mixture aside.

3

Dry the mahi mahi fillets with a paper towel.

4

Heat 2 tablespoons of oil in a skillet over medium to medium-high heat.

5

Coat the top and bottom of the mahi mahi fillets with the spice mixture.

6

Once the oil is hot, gently lay the coated fillets into the skillet.

7

Cook the fillets for 3 to 4 minutes on each side, carefully turning them after the first 3 minutes to avoid splattering oil.

8

Add a pad of butter to the skillet just before the fish is finished cooking on the second side.

9

Remove the fillets from the skillet and add another pad of butter to loosen any spices or bits stuck to the bottom.

10

Add 1-2 cloves of garlic to the skillet and cook for 1 minute, stirring it around in the hot oil.

11

Pour in 1/2 cup of chicken broth and let it come to a simmer.

12

Add the fillets back to the skillet with the simmering sauce and let them simmer on both sides for a couple of minutes to reduce the sauce.
