Pound chicken breast with a mallet to make them even.
Slice chicken breasts in half lengthwise to create four thin pieces.
Coat each chicken slice in almond flour, shaking off excess.
In a small bowl, combine chicken broth, lemon juice, Dijon mustard, and a teaspoon of reserved flour; whisk until smooth.
Heat a medium-sized pan over medium-high heat and melt 1 tablespoon of butter with 1 teaspoon of olive oil.
Cook half of the chicken in the pan for 2 minutes on each side until slightly golden.
Remove the first two pieces of chicken and set aside.
Add remaining olive oil to the pan and cook the other two pieces of chicken for 2 minutes on each side until slightly golden.
Turn down the heat to medium-low and add the chicken broth mixture to the pan, whisking to loosen bits from the chicken; let simmer for about 2 minutes.
Place all four pieces of chicken back in the pan, topping each with a slice of low sodium deli ham and a slice of light Swiss cheese.
Cover the pan and let simmer for 3-4 minutes until cheese melts and chicken is no longer pink.
