Panko crumbs add more crunch.
Spray the baking dish with cooking spray.
Melt 2 tablespoons of butter and mix with 1 cup of panko breadcrumbs to coat them.
Slice 2 large chicken breasts in half to create 4 thinner pieces.
Season both sides of the chicken with salt and pepper.
Layer 2 slices of ham on top of each piece of chicken.
Tear Swiss cheese slices in half and cover each piece of chicken with them.
Cover the top of each chicken piece with the breadcrumb mixture, pressing it down to adhere.
Preheat the oven to 350°F and bake the chicken for 30 to 40 minutes, checking for doneness.
Melt 3 tablespoons of butter in a saucepan over medium heat.
Add 3 tablespoons of flour to the melted butter and whisk to form a roux, cooking for 1-2 minutes.
Slowly whisk in 1/2 cup of chicken broth until combined.
Add 1 1/2 cups of milk while whisking continuously.
Season the sauce with salt and pepper to taste.
Add 1 tablespoon of Dijon mustard to the sauce and mix well.
Add 1/2 tablespoon of Worcestershire sauce to the sauce and stir.
Continue to whisk the sauce until it thickens slightly, then add 1/2 cup of shredded Parmesan cheese and mix until melted.
Remove the chicken from the oven when cooked through and browned, about 40 minutes.
Turn on the broiler for 2 minutes to crisp the breadcrumb topping.
Serve the chicken cordon bleu with the sauce on top and garnish with parsley.
