  • 1/4 cup sesame seeds

Instructions

  1. 1In a mixing bowl, combine the all-purpose flour and salt.
  2. 2Gradually add water and vegetable oil to the flour, mixing until a dough forms.
  3. 3Knead the dough on a floured surface for about 5 minutes until smooth.
  4. 4Cover the dough with a damp cloth and let it rest for 30 minutes.
  5. 5In another bowl, mix the mung bean paste, chopped scallions, sugar, and five-spice powder until well combined.
  6. 6Divide the rested dough into small balls, about the size of a golf ball.
  7. 7Roll each ball into a thin circle, about 4 inches in diameter.
  8. 8Place a spoonful of the mung bean mixture in the center of each circle.
  9. 9Fold the dough over to create a half-moon shape and seal the edges by pressing them together.
  10. 10Sprinkle sesame seeds on top of each pastry and place them on a baking tray.
  11. 11Preheat the oven to 375°F (190°C) and bake for 20-25 minutes or until golden brown.

Make the water dough by mixing warm water, maltose, all-purpose flour, caster sugar, salt, unsalted butter, shallot oil, and vegetable oil until a dough forms. Knead and let it rest.

Make the oil dough by mixing all-purpose flour and vegetable oil until a dough forms.

Prepare the maltose filling by mixing shallot oil, maltose, cake flour, brown sugar, fried shallot, sesame seeds, and salt until well combined.

Combine the water dough and oil dough, wrap the oil dough in the water dough, and roll it out.

Wrap the filling in the dough, ensuring to seal properly to prevent leakage.

Preheat the oven to 190C (375F).

Bake the pastries for 40-45 minutes, rotating the baking tray halfway through for even cooking.

Prepare the maltose water topping by mixing maltose with hot water and brush it on top of the pastries after baking.
