Start by melting a little bit of butter in a skillet over medium heat.
Add 500 grams of ground beef, 250 grams of ground veal, and 250 grams of ground pork to the skillet.
Add chopped onion to the meat mixture.
Sprinkle in a little bit of salt and 1 teaspoon of black pepper.
Add 3 cloves of minced garlic to the mixture.
Mix in 1 teaspoon of sage and 1 teaspoon of thyme.
Add 1/4 teaspoon each of cinnamon, cloves, and nutmeg to the pan.
Cook the mixture until the meat is browned, stirring occasionally to prevent burning.
Add 1 tablespoon of Worcestershire sauce to the meat mixture.
Once the meat is cooked through, add beef stock to the skillet and stir.
Add 3 bay leaves to the mixture, cover, and cook for about 15 minutes.
While the meat is cooking, boil 2 cups of potatoes in salted water until firm, then drain and let cool.
After 15 minutes, check the meat mixture and remove the bay leaves.
Break up some of the boiled potatoes with a fork, ensuring they are still chunky.
Add the potatoes to the meat mixture and stir to combine.
Turn off the heat and let the filling cool down before assembling the pie.
Prepare the pastry by rolling out dough on a floured surface.
Use a pie dish to shape the base of the pie with the pastry.
Fill the pie with the meat and potato mixture.
