Dice half a large onion into small pieces.
Dice one celery stalk into small pieces.
Chop one large clove of garlic.
Add a few tablespoons of olive oil to a pan over medium high heat.
Add the diced onion and celery to the pan.
Add the spice mixture (details in the description) to the pan.
Add the chopped garlic and cook for about 3 minutes before setting aside in a small bowl.
In the same pan, add 1 lb of ground pork and 1/4 lb of ground beef, breaking it up with a wooden spoon as it cooks.
Add the cooked vegetables and spices back into the meat mixture.
Add about half of a grated russet potato to the mixture.
Pour in 1 cup of beef stock that has been simmering at a low boil.
Reduce the heat and mix everything together, cooking for about 10 minutes.
Take the meat off the heat and let it cool while preparing the pastry.
Roll out two pieces of store bought puff pastry, one for the bottom and one for the top.
Add the filling to the pastry and press it firm to remove any air pockets.
Beat one egg and brush the crust all the way around before adding the top layer of pastry.
Make a few quick cuts in the top layer to let air escape.
Brush the entire top of the pie with egg wash for a golden brown finish.
Bake in a 375°F oven for about 45 minutes.
