1

Mix together the flour, salt, and pepper, then dredge the chicken in flour, shaking off any excess.

2

In a large skillet, heat olive oil and melt the butter over medium heat, swirling to coat evenly.

3

Brown the chicken in batches for 4-5 minutes on each side until golden and cooked through.

4

Transfer the chicken to a plate, cover, and set aside.

5

In the same skillet, sauté the garlic for about one minute, taking care not to burn it.

6

Add the sundried tomato oil and stir it in.

7

Add chicken stock to deglaze the pan, scraping up any browned bits stuck to the bottom.

8

Reduce the heat to medium-low and stir in the double/heavy cream and Parmesan cheese.

9

Simmer the sauce for a few minutes, seasoning with chili flakes, thyme, oregano, and add the chopped sundried tomatoes.

10

Return the chicken to the skillet and let the sauce simmer and thicken for a few more minutes.

11

Garnish with chopped fresh basil leaves and serve warm over pasta, rice, or baby potatoes.
