Simmer the cabbage mixture for about 45 minutes until tender.
Boil potatoes in salted water until soft, then drain and mash with butter and milk.
Prepare bread dumplings by mixing bread cubes with milk, eggs, and herbs, then shape into balls.
In a separate pot, cook the dumplings in boiling water for 15-20 minutes until they float to the surface.
For the gravy, collect the drippings from the roast and mix with flour and broth, cooking until thickened.
Serve the roast goose with red cabbage, potatoes, and dumplings, garnished with parsley.
