Roasted Chicken with Garlic Basil Butter

Preheat the oven to 400 degrees.

Line a baking dish with foil.

Rinse and pat dry the chicken.

Soften a stick of butter in the microwave until melty and soft.

Add 1 teaspoon of salt and 1/4 teaspoon of black pepper to the butter.

Chop about 6 big basil leaves and add to the butter mixture.

Add 3 cloves of peeled garlic to the butter mixture.

Mix the garlic butter well.

Coat the chicken with the garlic butter, getting it into all the cracks and crevices.

Pull back the skin at the top of the chicken and add some butter underneath the skin.

Massage the butter into the chicken.

Place the chicken in the oven and bake for 30 minutes before the first basting.

Baste the chicken with its juices after 30 minutes of baking.

Return the chicken to the oven for another 30 minutes.

Check the chicken after 1 hour and 20 minutes of total roasting time, ensuring it reaches 165 degrees with a meat thermometer.

Cut into the chicken to check for moisture and doneness.
