It has roots in indigenous cultures, where atole was a staple food. Today, it remains popular across Mexico and has various regional variations, often flavored with different spices or sweeteners.

Honey adds sweetness with a unique flavor.
Pour 3 cups of water into a pot.
Add half of a Mexican cinnamon stick and 5 whole cloves to the pot.
Bring the water to a boil.
Reduce the heat to medium-low and cover the pot, letting it simmer for about 10 minutes.
After 10 minutes, check the water; it should have changed to an amber color from the cinnamon infusion.
Remove the cinnamon stick and whole cloves from the water and discard them.
Rinse the rice under running water in a fine mesh strainer until the water runs clear (optional).
Add the rinsed rice to the cinnamon and clove infused water.
Bring the mixture to a boil again, then reduce the heat to low and cover the pot.
Let the rice cook for about 20 minutes until it has absorbed all the water.
Transfer most of the cooked rice to a blender, leaving some in the pot for texture (optional).
Add 1 cup of evaporated milk and 1 cup of regular milk to the blender with the rice.
Blend the mixture until smooth, about 30 seconds.
Pour the blended rice mixture back into the pot and turn the heat to medium.
Add 1 cup of milk, then the sugar, and the remaining 2 cups of milk to the pot.
Stir until well combined and let it simmer for about 5 minutes, stirring frequently to prevent burning.
Turn off the heat and add the Mexican vanilla blend.
