Preheat the oven to the lowest setting for 2 minutes, then turn it off and open the door slightly.
In a large bowl, combine 4.5 cups of all-purpose flour, 3/4 cup of warm milk, 1 whole egg, 4 egg yolks, 5 ounces of melted butter, 3/4 cup of sugar, a pinch of salt, and 2.5 teaspoons of instant yeast.
Mix the ingredients until a dough forms, then knead for about 10 minutes until smooth.
Cover the dough with a clean dish towel and place it in the pre-warmed oven to rise for about 30 minutes or until doubled in size.
To make the crumble, mix 2/3 cup of flour, 1/3 cup of powdered sugar, and 2 ounces of cold butter until crumbly.
Once the dough has risen, transfer it to a lined baking pan.
Press the dough into the pan and lay halved plums on top.
Sprinkle the cold crumble over the plums and cover the pan to let it rise for another 30 minutes.
Bake in the oven at 350°F (180°C) for 30 minutes.
