Preheat the oven to 400°F (200°C).

Chop half an onion and set it aside.

Measure half a cup or 40 grams of shredded parmesan cheese and set it aside.

Use a garlic press to press four cloves of garlic over the chopped onion.

Chop a quarter cup of parsley and set it aside.

In a large mixing bowl, add one cup or 60 grams of panko breadcrumbs and three quarters of a cup of milk, and let it soak for 10 minutes.

After 10 minutes, crack one egg into the bowl and add the soaked breadcrumbs, parsley, onion, garlic, and lemon zest.

Add one pound of ground beef and one pound of ground pork to the mixture.

Season with a teaspoon of salt and a teaspoon of black pepper, then mix everything together using your hands without pressing too hard.

Divide the mixture into about 24 two-ounce meatballs, rolling them lightly and placing them one inch apart on a rimmed baking sheet lined with foil.
