Salted Chocolate Chip Shortbread Cookies

1 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1 tsp vanilla extract
2 cups all-purpose flour
1/2 tsp salt
1 cup semi-sweet chocolate chips
1/4 tsp sea salt (for sprinkling)

Preheat your oven to 350°F (175°C).

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add the vanilla extract and mix until combined.

Gradually add the all-purpose flour and salt to the butter mixture, mixing until just combined.

Fold in the chocolate chips until evenly distributed throughout the dough.

Scoop tablespoon-sized portions of dough and roll them into balls. Place them on a baking sheet lined with parchment paper, spacing them about 2 inches apart.

Flatten each ball slightly with the palm of your hand and sprinkle a pinch of sea salt on top of each cookie.

Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
