1 tbsp garlic, finely chopped
1 tbsp ginger, finely chopped
1/2 onion, shredded
1/2 capsicum, cut lengthwise

1 carrot, julienned
1/4 cup corn
a pinch of turmeric powder
1 tsp curry powder
1/2 tsp red chilli powder
1 cup water
200 ml coconut milk
a pinch of sugar
1 tsp tamarind pulp

In a microwavable bowl, heat 1 and 1/2 tbsp of oil for 1 minute in the microwave.

Add 1 tbsp of finely chopped garlic, 1 tbsp of finely chopped ginger, 1/2 shredded onion, 1/2 capsicum cut lengthwise, a few curry leaves, and 1/2 tsp of salt. Mix well and microwave for another minute.

Add 1/2 cup of chopped French beans, 1 julienned carrot, and 1/4 cup of corn. Mix well and microwave for another minute.

Add a pinch of turmeric powder, 1 tsp of curry powder (or Garam masala/Sambar masala), and 1/2 tsp of red chilli powder. Mix well.

Pour in 1 cup of water, cover with cling film, and poke a few holes in the cling film to let steam escape. Microwave for another 2 minutes.

Carefully remove from microwave and open the cling film. Add 200 ml of coconut milk, a pinch of sugar, and 1 tsp of tamarind pulp. Mix well.

Cover again and microwave for another 2 minutes.

Remove cling film carefully, give the curry a good mix, and serve.
