Heat corn oil in a large pan over medium to high heat.
Add dried red chili, black mustard seeds, cumin seeds, and fennel seeds to the oil and let them pop and crackle.
Add chopped onions and fresh curry leaves; sauté for about 2 minutes.
Stir in garlic ginger paste and cook for another 2 minutes.
Add chopped celery, white radish, and snake gourd that has been soaked in salt water for 20 minutes and drained.
Add green beans that have been de-stringed and chopped.
Sprinkle in equal parts of cumin, coriander, chili powder, and turmeric, along with a little more salt; pan-fry for about 4 minutes.
Add capsicum and okra; stir and cook for another 2-3 minutes, stirring constantly to prevent sticking.
Pour in coconut milk and cover with a lid; reduce heat slightly and cook for about 6 minutes, stirring occasionally.
Check the consistency of the coconut milk and season with salt if needed.
Add a pinch or two of garam masala powder and fresh cilantro; mix well before serving.
