1/2 cup mixed vegetables (carrots, peas, corn, bell pepper etc.), finely chopped
1 small onion, finely chopped
1 tsp garlic, chopped
1 tsp ginger, chopped
1 green chilli - cayenne pepper (optional for extra spice)
4 cups vegetable broth or water
1/2 tsp cumin powder
Salt and pepper to taste
2 tsp olive oil or butter or any vegetable oil
Fresh coriander or parsley for garnish

In a cooking pan, heat 2 teaspoons of oil (or butter).

Add chopped garlic, ginger, and green chili, finely chopped onions and sauté until onion turns soft and translucent.

Add the mixed vegetables (carrots, peas, corn, bell peppers, etc.). Sauté for 2-3 minutes.

Add rolled oats to the pan and roast for 2 minutes to enhance flavor.

Pour in 4 cups of water (or vegetable broth). Stir well.
