Traditionally made with pigeon peas or kidney beans, it reflects the region's agricultural heritage and resourcefulness. This dish is a symbol of hospitality and is frequently served at gatherings and celebrations. Today, variations exist across the Caribbean, with many families adding their unique twists, making it a beloved comfort food worldwide.

Chop 1 medium onion into small pieces.
Roughly chop 3 garlic cloves.
Heat a big pot over medium to medium-high heat.
Add 1 tablespoon of salted butter and 1 tablespoon of oil to the pot.
Add the chopped onions to the pot and brown them.
After the onions are browned, add the chopped garlic and cook for 1-2 minutes to release the oils without burning it.
Season the onions and garlic with all-purpose seasoning.
Rinse 2 cups of long-grain rice under water until the water runs clear to remove the starch.
Add the rinsed rice to the pot and toast it for a few minutes to bring out a nutty flavor.
Add 1 can of dark red kidney beans (rinsed) to the pot.
Pour in chicken broth, adjusting the amount if you prefer drier rice.
Add pure cream coconut or a can of coconut milk, adjusting the liquid as needed.
Bring the mixture to a rolling boil, then reduce the heat and cover the pot.
Cook for 20 minutes, stirring occasionally to prevent sticking.
Check the softness of the scotch bonnet pepper to avoid it exploding during cooking.
After 20 minutes, remove the sprig of thyme and bay leaves, then fluff the rice before serving.
