1

Wash the dried red kidney beans to remove any dirt or dust until the water is clear.

2

Drain the beans and pour fresh water into a pot, then add the red kidney beans.

3

Soak the beans for about 6 hours or overnight.

4

Add fresh thyme to the pot, removing it from the stem if desired.

5

Crush fresh garlic and add it to the pot.

6

Cover the pot and place it in the fridge to soak for about 6 hours.

7

After 6 hours, the beans should have swollen. Add more water to the pot and cook the beans for about 35 minutes until soft.

8

Remove some of the kidney beans and set them aside.

9

Add coconut milk, sliced onions, spring onions, and salt to the pot with the beans.

10

Add a little more water and allow the mixture to simmer.

11

Wash the basmati rice until clean and set aside to drain excess water.

12

Add the washed basmati rice to the pot with the cooked kidney beans.

13

Add scotch bonnet to the pot and mix everything together.

14

Optionally, add butter to the pot.

15

Cover the pot and continue cooking.

16

After about 10 minutes, check the rice and add more water if needed, then cover and cook until the rice is soft.

17

Check the rice and peas to ensure it is properly cooked and the water has dried, then mix everything properly.
