Black Forest Gateau

Preheat the oven to 180 degrees Celsius.

Measure and mix 201 grams of flour, 50 grams of cocoa powder, starch, and baking powder in a bowl.

In a separate bowl, beat 6 eggs with 200 grams of sugar and 6 tablespoons of water for at least 5 minutes until doubled in size.

Sieve the flour and cocoa mixture into the egg mixture bit by bit, mixing in between for a smoother texture.

Transfer the mixture into a greased springform pan.

Bake in the oven for 20 minutes.

Remove the sponge cake from the oven and let it cool.

Prepare the filling by taking Schattenmorellen out of the jar and keeping the juice.

Mix some cherry juice with starch, then bring the rest of the cherry juice to a boil and add the starch mixture to thicken it.

Add the cherries to the thickened cherry juice.

Cut the sponge cake into three equal layers using a cake cutting wire.

Brush more than 3 tablespoons of Kirschwasser on top of each sponge layer.

Layer cherries on top of the first sponge layer, followed by a bit of whipping cream.

Add the second sponge layer, brush with Kirschwasser, and top with whipping cream.

Spread the remaining whipping cream on the top and sides of the cake.

Chill the cake in the fridge to cool.

Grate dark chocolate for decoration.
