200g caster sugar
200g self raising flour
30g cocoa powder
1 tsp baking powder
a pinch of salt
a pinch of Madagascan vanilla
4 medium eggs
2 tbsp (30ml) milk
300g frozen cherries or 400g fresh cherries, pitted and roughly chopped
300ml double cream (40ml + 260ml)
30g dark chocolate chips
10g dark chocolate curls
10g icing sugar

Preheat the oven to 350°F (175°C).

Grease and flour cake pans.

In a bowl, mix together the caster sugar, self raising flour, cocoa powder, baking powder, salt, and vanilla.

In another bowl, cream the softened butter and sugar until light and fluffy.

Add the eggs one at a time, mixing well after each addition.

Stir in the milk and mix until combined.

Fold in the dry ingredients until just combined.

Divide the batter between the prepared cake pans and smooth the tops.

Bake for 25-30 minutes until a toothpick comes out clean.

Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
