Cream together the caster sugar and unsalted butter until light and fluffy.

Add the eggs one at a time, mixing well after each addition.

Sift in the self-raising flour and cocoa powder, then fold together with a spoon.

Grease and line an 8-inch cake tin with greaseproof paper.

Spread the cake batter evenly into the pan and smooth the top.

Bake in a 150°C fan oven (170°C normal oven) for about 1 hour.

Check if the cake is cooked by stabbing it with a skewer; if it comes out clean, it's done.

Leave the cake to cool in the tin for 15 minutes before transferring it to cool completely.

Melt the dark chocolate in a small pan, then pour in 200 ml of double cream and mix until smooth; cool in the fridge.

Whip the extra heavy whipping cream until soft peaks form.

Drain the cherries, keeping back about 1 cup of the syrup.

Cut the cooled cake into three layers using a sharp serrated knife.
