Shred 150 grams of swiss cheese on the small side of the grater.
In a pot, combine shredded cheese, 25 grams of butter, 100 grams of water, 10 grams of sodium citrate, 1 gram of sodium hexametaphosphate, and a pinch of salt.
Heat the mixture over low heat, stirring until the cheese melts and becomes a smooth liquid.
Pour the melted cheese mixture into a glass mold and refrigerate overnight.
After refrigerating, slice the cheese to check the texture.
For the macaroni casserole, brown 1 pound of mixed beef and pork in a pot with cooking spray, salt, and black pepper.
Add 1/2 diced onion and continue browning until the meat is cooked.
Pour in 1 cup of beef stock and add pieces of the processed cheese, melting it into the mixture.
Add undercooked macaroni to the meat and cheese mixture, stirring to combine.
Transfer the mixture to an oven-proof container, sprinkle more cheese on top, and bake at 350 degrees for 35-45 minutes.
Let the casserole cool for 15 minutes before serving, garnished with parsley.
