1

Get 2 tablespoons of olive oil heating in a 4-6 quart pot over medium-high heat.

Add in 1 white or yellow diced onion; sauté for about 5 minutes until soft and translucent.

3

Add in 5 cloves of minced garlic; let toast for about 60-90 seconds.

4

Pour in 1/2 cup of chicken broth, or white/red wine.

5

Add 28-30 ounces of crushed tomatoes, 15 ounces of tomato sauce, and 6 ounces of tomato paste.

6

Sprinkle in 1 tablespoon of sugar (or 1 tablespoon of finely minced carrot).

7

Add 1 tablespoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.

8

Optionally, add 1 tablespoon of fennel seeds.

9

Add 1/2 cup of fresh basil (or 2 tablespoons dried) and 1/4 cup of freshly chopped parsley (or 1 tablespoon dried).

10

Stir everything together and bring it to a simmer.

11

Let it simmer over low heat for at least 30 minutes, up to 2-4 hours with a lid on to prevent evaporation.

12

Transfer to a slow cooker if desired, to simmer throughout the day.

13

Once done, serve as is or blend until smooth.
