1 1/2 cups heavy whipping cream
1 1/2 cups unsweetened almond milk
1/2 cup stevia
1 teaspoon vanilla extract
1 tablespoon gelatine

In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.

In a saucepan, combine the heavy cream, almond milk, erythritol, and salt. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.

Once warm, remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.

Add the vanilla extract and mix well.

Pour the mixture into individual serving cups or molds.

Refrigerate for at least 4 hours, or until set.
