Grab a nine inch spring form pan.
Process 30 chocolate sandwich cookies (Oreos) until finely ground, or crush them in a bag.
In a large bowl, add 70 grams (5 tablespoons) of unsalted butter and microwave on 50% power in 30 second bursts until melted.
Add 3 tablespoons of sugar to the melted butter and stir until combined.
Dump the cookie mixture into the springform pan and press the crumbs down with a flat bottomed glass or measuring cup, compacting them halfway up the pan.
Wrap the springform pan in extra wide foil, folding the edges over to create a water bath setup.
Chill the crust in the fridge for about half an hour while the oven heats up.
In a mixing bowl, add 4 (8 ounce) blocks of cream cheese and 1/2 cup of sour cream, and mix on medium until thoroughly combined, about three minutes.
Prepare about 8 cups of boiling water for the water bath.
Add 1 cup (260 grams) of creamy peanut butter, 1 cup (200 grams) of granulated sugar, and 1/4 teaspoon of salt to the cream cheese mixture and mix on medium low until creamy, scraping down the bowl as needed.
Crack 4 large eggs into a bowl and lightly beat them before adding them to the mixture a little at a time, mixing on medium low to avoid incorporating air.
Add 2/3 cup (160 mL) of heavy whipping cream and 1 teaspoon of vanilla to the mixture and mix until combined, scraping the bowl down as needed.
Pour the filling into the prepared crust and place the springform pan into the water bath in the oven.
