Wash the oxtail with vinegar and water, rinse, dry, and trim excess fat.
Season the oxtail with 2 tbsp all-purpose seasoning, 1 tsp garlic powder, 1/2 tsp black pepper, and 1 1/2 tbsp curry powder, massaging the spices into the meat.
Let the oxtail marinate for at least an hour or overnight if possible.
Heat 1 tbsp vegetable oil in a hot pan and toast the remaining curry powder until it reaches a slight smoke point.
Add the seasoned oxtail to the pan and sear for 2 to 5 minutes on each side until browned.
Cover the oxtail and let it generate its own liquid for 5 to 10 minutes.
Add 4 cups of water to the pan, ensuring the oxtail is fully submerged, and stir.
Add 2 tbsp green seasoning, a piece of ginger, and a few fresh thyme stalks to the pot.
Bring the mixture to a boil, then cover and reduce heat to low, cooking for about 2 hours until the meat is 90% tender.
Check the pot every 20 to 30 minutes, adding more water if necessary to prevent sticking or burning.
After 1.5 hours, add another cup of water for a total of 6 to 6.5 cups, and continue cooking for another hour.
After 2 hours, check the tenderness of the meat and adjust seasoning if necessary.
Add 2 chopped Irish potatoes and 1 chopped carrot to the pot, cooking for an additional 15 minutes.
Add 1 scotch bonnet pepper, 1/2 chopped onion, 2 chopped green onions, and 4 chopped garlic cloves to the pot.
Mix in 1/4 cup coconut milk and stir everything together.
