Wash oxtail with lime juice three to four times to ensure it's clean.
Season oxtail with 1 tbsp all-purpose seasoning, 1 tbsp meat seasoning, 1 tbsp seasoned salt, 1 tbsp garlic powder, 1 tbsp oxtail seasoning, and 0.5 tbsp beef seasoning, saving some for later.
Add 2 tsp curry powder to the oxtail and rub the seasoning in well.
Cover the seasoned oxtail with Saran wrap and refrigerate for 25 minutes to marinate.
Chop green onions, carrots, potatoes, ginger, garlic, and thyme while the oxtail marinates.
Heat 0.5 cup vegetable oil in a pot until hot.
Add 2 tsp curry powder to the hot oil and mix.
Add the marinated oxtail to the pot and fry for 15 minutes, checking occasionally.
Drain some oil from the pot after frying the oxtail.
Add 4 cups of hot water to the pot with the oxtail.
Add the chopped green seasoning and the leftover seasoning to the pot.
Bring the pot to a boil, then taste and adjust seasoning as needed.
Cover and cook the oxtail for 2.5 hours, checking occasionally.
After 2.5 hours, add the chopped potatoes and carrots and cook for an additional 30 minutes.
