Preheat the oven to 180°C (350°F).
Line a baking tray with parchment paper.
Cream butter and icing sugar together until light and fluffy.
Sift in plain flour and cornflour, then mix until combined.

Transfer the dough to a piping bag fitted with a star nozzle.
Pipe small swirls onto the prepared baking tray, leaving space between each.
Bake in the preheated oven for 10-12 minutes until pale golden.
Remove from the oven and allow to cool on the tray for a few minutes before transferring to a wire rack.
Once cooled, spread raspberry jam on the flat side of half the biscuits.
Top each jam-covered biscuit with another biscuit to form a sandwich.
Melt dark chocolate in a heatproof bowl over simmering water.
Drizzle melted chocolate over the biscuit sandwiches and let set before serving.
