1 head radicchio
1/2 cup genoa salami
1/2 cup aged provolone
1 cup chickpeas
1/2 cup pepperoni

Start by preparing the dressing with 2 cloves of garlic and 1 clove of roasted garlic.

Add 1 tablespoon of dried oregano, 1/4 cup of red wine vinegar, the juice of 1 lemon, salt, and pepper to the garlic.

Stir the dressing together and let it marinate for about 5 minutes.

Slowly whisk in 1/2 cup of olive oil to emulsify the vinaigrette.

Prepare the onion by separating the layers and stacking them to slice them 1/16 inch thick.

Soak the sliced onion in ice water to reduce its pungency.

Slice radicchio and add it to the salad for a slightly bitter taste.
