Mix 100g coconut, 150g powdered sugar, 100g almond powder, and 1 vanilla sugar in a bowl until well combined.
Chill the mixture in the refrigerator for 30 minutes to firm up.
Scoop out small portions of the mixture and flatten them in your palm.
Place a chopped almond in the center of each portion and roll it into a ball.
Melt 150g white chocolate in a microwave or double boiler until smooth.
Dip each coconut ball into the melted white chocolate, ensuring it's fully coated.
Roll the chocolate-coated balls in additional coconut flakes to cover.
Place the finished balls on a parchment-lined tray and refrigerate until the chocolate sets, about 15-20 minutes.
