6 tbsp Water
1/2 tsp Agar agar powder
4 tbsp Water
2 tbsp Sugar
3/4 cup Mango Pulp

Make homemade cream cheese by heating 1 liter of full fat milk and adding 4 tbsp lemon juice and a pinch of salt. Stir until curdled, then strain and rinse with cold water.

For the biscuit layer, crush 12 Marie gold biscuits and mix with 2 tbsp melted ghee. Press this mixture into the bottom of a springform pan.

For the cheesecake layer, combine 150 g of the homemade cream cheese (or readymade), 1/2 cup condensed milk, 3-4 tbsp mango pulp, and 1 tsp gelatin dissolved in 6 tbsp water.

Pour the cheesecake mixture over the biscuit layer and smooth the top.

For the mango jelly, dissolve 1/2 tsp agar agar powder in 4 tbsp water and mix with 2 tbsp sugar and 3/4 cup mango pulp. Heat until thickened, then pour over the cheesecake layer.

Refrigerate the cheesecake until set.
