1 quart coconut water
1/4 cup sugar

Pour 1 quart of coconut water into a clean jar.

Add 1/4 cup of sugar to the coconut water and stir to combine.

Cover the jar loosely with a cap to keep out dust but allow some airflow.

Place the jar on a seed mat to maintain a temperature of about 85°F.

Let the mixture sit for about 2 weeks to develop a colony of probiotics.

After 2-3 weeks, check for a scoby forming on top of the mixture.

Taste the fermented coconut water; it should have a tart flavor.

If desired, pour the fermented coconut water over ice to serve.

To carbonate, fill kombucha bottles with the fermented coconut water and optionally add sugar before capping.

Let the sealed bottles sit at room temperature for 1-2 days to carbonate, then refrigerate.
