Quarter the onion and cut the celery and carrots into big chunks.
Peel the garlic cloves.
Add the onions and garlic to the food processor and pulse a couple of times.
Add the carrots and celery to the food processor and pulse again.
Add 2 1/2 cups of spinach to the food processor.
Stop to scrape down the sides of the food processor as needed.
Cook the mixed vegetables in a skillet for about 8 minutes until all the liquid cooks off, stirring frequently.
Soak 1/4 cup of chia seeds in 1/4 cup of water for about 15 minutes to act as a binder.
Once the vegetables are cooked and the water has evaporated, add the soaked chia seeds to the mix.
Add 1 1/2 pounds of ground turkey and 1 1/4 cups of cooked quinoa to the bowl.
Add 3 tablespoons of soy sauce and a few grinds of black pepper.
Mix all the ingredients together until well combined.
Form the mixture into a loaf shape about 4 by 10 inches.
Spread 1/4 cup of ketchup (or barbecue sauce) on top of the meatloaf.
Bake in the oven for about 40 minutes.
Once cooked, let the meatloaf cool before slicing.
