Heat about 1.5 to 2 liters of olive oil in a large pot to around 100-110 degrees Celsius.

Cook the potatoes in the oil for about 25 minutes until soft inside.
For the sauce, combine 1 hot pepper, 3 cloves of garlic, 80 milliliters of water, 0.5 teaspoon of salt, 1 teaspoon of sugar, and 2 teaspoons of white wine vinegar in a pot and simmer for 10-15 minutes.
Once the potatoes are cooked, increase the heat to finish frying them and achieve a crunchy exterior.
Mix in 4 tablespoons of mayonnaise and adjust seasoning with salt.
