Heat 2 tablespoons of sunflower oil in a pan over medium heat.
Season 500 grams of chicken thighs with salt and pepper and add to the pan.
Cook the chicken for about 7-8 minutes, flipping occasionally.
Remove the chicken from the pan and set aside.
In the same pan, add 1 cup of chopped onion and 3-4 black olives, and cook for 4 minutes.
Add 1 tablespoon of garlic to the pan and cook for another minute.
Stir in 1/4 cup of tomato paste and 1 teaspoon of mixed Italian herbs, cooking for another 4 minutes while stirring often.
Crush a 400 ml can of whole plum tomatoes by hand and add to the pan.
Return the chicken to the pan and simmer on low heat with a lid for 5-6 minutes.
Add 2 cups of bell peppers to the pan and cook for an additional 3-4 minutes on low heat.
Check for seasoning and adjust salt and pepper as needed.
