1

Grab your biggest cast iron pan and turn it on to heat up the oil.

2

Season each chicken breast with 1 teaspoon of salt and 1 teaspoon of pepper, half on one side and half on the other.

3

Once the oil is hot and rippling, add the chicken breasts to the pan and sear them until caramelized, about a few minutes per side.

4

While the chicken is searing, peel the potatoes and prepare to chop them.

5

Cut the potatoes into uniform one-inch chunks for even cooking.

6

Check the chicken; if it releases easily from the pan, flip it over to brown the other side.

7

Once the chicken is browned, remove it from the pan and place it on a plate.

8

Add a little more oil to the pan, crush the garlic cloves, and add them to the pan with the potatoes.

9

Add the potatoes to the pan in a nice even layer, along with 3 sprigs of thyme and a bay leaf.

10

Pour in 1.5 cups of chicken stock over the potatoes.
