Plug in the Instant Pot and hit the sauté button to warm it up.

Prepare the seasoning blend by mixing 1 teaspoon of salt, 4 teaspoons of Italian seasoning, 2 teaspoons of smoked paprika, 1 teaspoon of onion powder, 1 teaspoon of garlic powder, and 1 teaspoon of black pepper in a bowl.

Lay out the chicken on a plate and season the bottom with half of the seasoning blend, then flip and season the skin side with a quarter of the remaining seasoning mix.
