Preheat the oven to 400°F (200°C).
Peel and cut the yam into thick slices.
Peel and slice the plantain diagonally into thick pieces.
Toss the yam slices with olive oil, salt, black pepper, garlic powder, and onion powder until well coated.
Arrange the yam slices in a single layer on a baking sheet.
Toss the plantain pieces with olive oil, paprika, and salt until evenly coated.
Place the plantain on another baking sheet in a single layer.
Roast the yam in the oven for 25-30 minutes until golden and tender, flipping halfway through.
Roast the plantain for 15-20 minutes until caramelized and soft, flipping halfway through.
Remove both from the oven and let cool slightly before serving.
Garnish with fresh herbs before serving.
