Turkey Lettuce Wraps

1.25 pounds ground turkey
1 small red pepper (or 0.5 if large)
2 cups sliced mushrooms
3 cloves garlic
1 inch fresh ginger
0.5 can water chestnuts
low-sodium soy sauce
sriracha
fresh scallions

Brown 1.25 pounds of ground turkey in a pan until completely cooked.

Drain the juice from the cooked turkey and set it aside in a bowl.

Heat a little olive oil and add a bit of grapeseed oil to the pan.

Chop up 1 small red pepper (or half if large) and add it to the pan.

Add 2 cups of sliced mushrooms to the pan and sauté until cooked.

Grate 3 cloves of garlic into the pan.

Grate 1 inch of fresh ginger into the pan.

Add half a can of drained water chestnuts to the pan.

Return the cooked turkey to the pan and mix everything together, breaking up the turkey as needed.

Cook for another minute to let the flavors combine.
