Ingredients

  • 1 large cucumber
  • 8 slices of white bread
  • 4 oz cream cheese
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1Wash the cucumber and slice it thinly using a mandoline or sharp knife.
  2. 2In a bowl, mix the cream cheese, chopped dill, lemon juice, salt, and black pepper until well combined.
  3. 3Spread a generous layer of the cream cheese mixture on one side of each slice of bread.
  4. 4Layer the cucumber slices evenly on half of the bread slices.
  5. 5Top with the remaining bread slices, cream cheese side down, to form sandwiches.
  6. 6Trim the crusts off the sandwiches for a neat presentation.
  7. 7Cut each sandwich into quarters or halves, depending on your preference.
  8. 8Arrange the sandwiches on a platter and serve immediately.

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh dill, chopped
  • 4 slices of whole grain bread
  • Lettuce leaves (for serving)

Instructions

  1. 1Place the eggs in a saucepan and cover them with water. Bring to a boil over medium heat.
  2. 2Once boiling, cover the saucepan and remove it from heat. Let the eggs sit for 12 minutes.
  3. 3After 12 minutes, transfer the eggs to a bowl of ice water to cool for about 5 minutes.
  4. 4Peel the cooled eggs and chop them into small pieces.
  5. 5In a mixing bowl, combine the chopped eggs, mayonnaise, Dijon mustard, salt, black pepper, chives, and dill. Mix until well combined.
  6. 6Toast the slices of whole grain bread until golden brown.
  7. 7Spread a generous amount of the egg salad mixture onto two slices of the toasted bread.
  8. 8Top with lettuce leaves and place the other two slices of bread on top to form sandwiches.
  9. 9Cut the sandwiches in half and serve immediately.

  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. 1In a mixing bowl, combine the heavy cream, powdered sugar, vanilla extract, and a pinch of salt.
  2. 2Using a hand mixer, whip the cream mixture until soft peaks form.
  3. 3In another bowl, toss the sliced strawberries with lemon juice to enhance their flavor.
  4. 4Spread a generous layer of the whipped cream on one side of each slice of bread.
  5. 5On four of the slices, layer the lemon-infused strawberries on top of the whipped cream.
  6. 6Top with the remaining slices of bread, cream side down, to form sandwiches.
  7. 7Cut the sandwiches into quarters or halves, as desired.
  8. 8Serve immediately or refrigerate for up to an hour before serving.
