Cucumber, Egg Salad, & Strawberry Tea Sandwiches – Easy & Elegant

Ingredients
- ●1 large cucumber
- ●8 slices of white bread
- ●4 oz cream cheese
- ●1 tbsp fresh dill, chopped
- ●1 tbsp lemon juice
- ●1/2 tsp salt
- ●1/4 tsp black pepper
Instructions
- 1Wash the cucumber and slice it thinly using a mandoline or sharp knife.
- 2In a bowl, mix the cream cheese, chopped dill, lemon juice, salt, and black pepper until well combined.
- 3Spread a generous layer of the cream cheese mixture on one side of each slice of bread.
- 4Layer the cucumber slices evenly on half of the bread slices.
- 5Top with the remaining bread slices, cream cheese side down, to form sandwiches.
- 6Trim the crusts off the sandwiches for a neat presentation.
- 7Cut each sandwich into quarters or halves, depending on your preference.
- 8Arrange the sandwiches on a platter and serve immediately.

- ●4 slices of whole grain bread
- ●Lettuce leaves (for serving)
Instructions
- 1Place the eggs in a saucepan and cover them with water. Bring to a boil over medium heat.
- 2Once boiling, cover the saucepan and remove it from heat. Let the eggs sit for 12 minutes.
- 3After 12 minutes, transfer the eggs to a bowl of ice water to cool for about 5 minutes.
- 4Peel the cooled eggs and chop them into small pieces.
- 5In a mixing bowl, combine the chopped eggs, mayonnaise, Dijon mustard, salt, black pepper, chives, and dill. Mix until well combined.
- 6Toast the slices of whole grain bread until golden brown.
- 7Spread a generous amount of the egg salad mixture onto two slices of the toasted bread.
- 8Top with lettuce leaves and place the other two slices of bread on top to form sandwiches.
- 9Cut the sandwiches in half and serve immediately.

- 1In a mixing bowl, combine the heavy cream, powdered sugar, vanilla extract, and a pinch of salt.
- 2Using a hand mixer, whip the cream mixture until soft peaks form.
- 3In another bowl, toss the sliced strawberries with lemon juice to enhance their flavor.
- 4Spread a generous layer of the whipped cream on one side of each slice of bread.
- 5On four of the slices, layer the lemon-infused strawberries on top of the whipped cream.
- 6Top with the remaining slices of bread, cream side down, to form sandwiches.
- 7Cut the sandwiches into quarters or halves, as desired.
- 8Serve immediately or refrigerate for up to an hour before serving.
