Greek yogurt reduces calories while maintaining creaminess

1

Drain one jar of cooked chickpeas into a colander and rinse under water.

2

Shake off excess water and transfer chickpeas into a large bowl.

3

Using a potato masher or large fork, mash down the chickpeas until semi-mashed with some chunks remaining.

4

Add 5 oz of plain Greek yogurt over the mashed chickpeas.

5

Add 1 tbsp of Dijon mustard, 1 cup of chopped English cucumber, 1/3 cup of chopped red onion, 1/4 cup of chopped dill pickles, and finely grated garlic to the bowl.

6

Squeeze in 1 tbsp of fresh lemon juice and season with sea salt and black pepper.

7

Mix everything together until well combined. If the mixture is not creamy enough, add more Greek yogurt.

8

Lightly toast a couple of slices of whole wheat sandwich bread to prevent sogginess.

9

Spread some of the creamy chickpea mixture over one slice of toast and top with another slice to form a sandwich.
