Select ripe tomatoes and cut the tops off to create a hollow.
Scoop out the insides of the tomatoes, reserving the pulp.
Cook rice in water until tender, then set aside.
Sauté onions and garlic in olive oil until translucent.
Add ground meat to the onion mixture and cook until browned.
Mix the cooked rice, reserved tomato pulp, fresh herbs, salt, and pepper into the meat mixture.
Stuff the hollowed tomatoes with the rice and meat mixture.
Place the stuffed tomatoes in a jar or container.
Combine vinegar, water, sugar, and spices in a bowl and stir until dissolved.
Pour the pickling liquid over the stuffed tomatoes until fully submerged.
Seal the jar and refrigerate for at least 24 hours before serving.
Serve cold as an appetizer or side dish.
