3 bunches fresh Swiss chard
13-16 oz pumpkin, cubed
5-7 mini bell peppers, cut into halves
3-4 tbsp olive oil
1 large or 2 small onions, sliced into semicircles
2-3 cloves of garlic, minced
⅓ cup bulgur (#1 grind) + ⅓ cup hot water
2 fresh tomatoes, peeled and cubed
2-3 tbsp fresh parsley
Salt and pepper to taste

Boil a pot of water, first cut and add the Swiss chard stems, then after it starts to boil and cook about 3-4 minutes, add coarsely chopped leaves and cook another 2 minutes.

Place the cooked Swiss chard on a strainer and set aside.

Wet the bulgur with hot water and set aside.

Sauté onions and peppers with olive oil for about 4-5 minutes.

Add pumpkin, salt, and pepper, cover the lid, and cook for 3-5 minutes, or until the pumpkin is tender.

Add tomatoes, Swiss chard, garlic, bulgur, and salt. Toss and cook everything a few more minutes.

Add freshly chopped parsley or cilantro, or both.
